Every year, my husband and I go to the local strawberry patch and pick our own fresh strawberries. It was actually one of the first things we did when we met! My husband’s grandmother loves to tell everyone that we fell in love in the strawberry patch (cute, right?).
I love to make this strawberry pie recipe with freshly picked strawberries! It is a super easy recipe, and the pie tastes fantastic. It is perfect for sitting on the front porch, enjoying that early summer weather. I hope you love this easy strawberry pie recipe as much and my husband and I do!
Tools you will need to make this strawberry pie:
Fresh Strawberry Pie
Ingredients
- 1 (9 inch) Deep Dish Pie Shell, Baked & Cooled (About 20 Minutes)
- 5 Cups Fresh Picked Strawberries
- 3/4 Cups Water
- 1 1/2 Cups Sugar
- 4 Tablespoons Cornstarch
- 2 Teaspoons Lemon Juice
- (Optional) Whipped Cream for Serving
Instructions
- Bake pie shell according to the directions on the packaging. This is optional, but I always put aluminum foil around the edges to keep them from burning. I take the aluminum foil off when there are just a few minutes remaining for the pie shell to cook.
- When the pie shell is done cooking, set to the side and allow to cool for about 20 minutes.
- In a bowl, mash enough strawberries to make 1 1/2 Cups.
- In a saucepan, mix sugar, cornstarch, water, crushed strawberries, and lemon juice.
- Bring mixture to a boil, reduce heat and simmer. Stir until the mixture has thickened.
- Meanwhile, fill cooled pie shell with remaining strawberries (halved or whole).
- Once the mixture has thickened and slightly cooled, pour it over the strawberries in the pie shell.
- You can add additional strawberries to the top of the pie (Note: If you do this do not fill the pie shell with the mixture).
- Refrigerate until set, about 3 hours, before serving.
- When serving, top the pie with whipped cream and enjoy!
